1. Kulfi falooda recipe

Falooda Kulfi is a delightful combination of two popular Indian desserts: falooda and kulfi. Kulfi is a dense and creamy Indian ice cream, and when combined with the textures and flavors of falooda, it creates a fantastic treat. Here’s a recipe to make Falooda Kulfi:

Ingredients

For the Kulfi Base:

  •  2 cups full-fat milk
  • 1/2 cup sweetened condensed milk
  • 1/2 cup heavy cream
  • 1/4 cup sugar (adjust to taste)
  • 1/2 teaspoon cardamom powder
  • A pinch of saffron strands (optional)

For the Falooda:

  • 1/4 cup falooda sev (vermicelli)
  • 2 cups water
  • 2 tablespoons sugar

For Assembling:

  • 2 tablespoons rose syrup
  • 2 tablespoons sweet basil seeds (sabja seeds), soaked in water
  • Chopped nuts (pistachios, almonds) for garnish
  • Maraschino cherries for garnish (optional)

Instructions

Step 1: Prepare the Kulfi

In a heavy-bottomed pan, bring the milk to a boil, stirring constantly to prevent it from sticking to the bottom.

Reduce the heat to low and simmer the milk, stirring frequently, until it reduces to about half its original volume. This may take around 3040 minutes.

Add sweetened condensed milk, heavy cream, sugar, cardamom powder, and saffron strands (if using). Mix well and simmer for another 57 minutes.

Remove the mixture from heat and let it cool to room temperature.

Prepare the Falooda Sev:

Boil the water in a separate pot and add the falooda sev.

Cook the sev as per the package instructions (usually just a few minutes). Ensure they are soft but not mushy.

Drain the cooked sev and rinse them with cold water. Set them aside.

Step 2: Assemble the Falooda Kulfi

Take kulfi molds or small cups. Start by adding a spoonful of soaked sweet basil seeds at the bottom of each mold.

Add a couple of tablespoons of the cooked falooda sev on top of the basil seeds.

Pour a small amount of rose syrup over the falooda sev for flavor and color.

Carefully pour the cooled kulfi mixture into each mold, filling them almost to the top.

Cover the molds with aluminum foil or lids.

Place the molds in the freezer and let the kulfi set for at least 6 hours or overnight.

Step 3: Serve

To serve, remove the kulfi molds from the freezer, dip them briefly in hot water to loosen the kulfi, and unmold them onto serving plates.

Garnish with chopped nuts and, if desired, maraschino cherries.

Enjoy your homemade Falooda Kulfi, a delightful and refreshing dessert that combines the best of both worlds!
